Anyway, Scott's work finally is doing payroll earlier so when payday falls on a Fri or Sat they do it Thurs so it's actually in the bank for us on Fri. Otherwise our credit union wouldn't process it until Mon. That was a pain. So I went out Fri. and got all my shopping done and since I was finally going to have Scott home on a Sunday morning I decided we should do a nice little brunch for conference. I love cooking when I have the time and this was just fun to make a little spread of stuff. And it was really really good. I tried to make the options healthier or at least somewhat organic where I could. But here was our meal:
I made some homemade orange rolls. They were so good. All these recipes are from Our Best Bites by the way. They are pretty easy to make and nice because you can just make them the night before and keep them covered in the fridge. Let them sit for a bit to warm up in the morning and rise and then cook them like normal.
Some breakfast taquitos that had a super yummy dipping sauce. These were easy enough to whip up the morning of.
This was fruit bruschetta with an orange cream sauce. I chopped the fruit the night before. Dicing it so tiny kind of made it a little mushy by morning. I might just dice it the morning of next time. I got a nice little multigrain baguette from Trader Joes that worked great. You butter the slices and put cinnamon and sugar on it and toast it. So good! The toasting was done the morning of and I recommend buying your baguette the day before at earliest. I was pushing it for two days since these are baked fresh. It got a little tougher sitting that long.
I can't remember what these are called but like pigs in a blanket. Basically sausage in puff pastry dough. Super easy to make and they can be frozen. So that morning all they needed was to be put on a baking sheet and given a little egg wash then they were good to go. There was also a good dipping sauce for these. Like honey mustard but maple syrup instead of honey. Heavenly.
So I think this will definitely become tradition. Making up a little brunch. I tried to keep it small scale since I knew the kids wouldn't eat much and it was mainly Scott and I. He could take some of the leftovers to work so that helped. But it was such a nice day to be able to have a brunch and just be with my family watching conference.
